Ah - I did try variations along the above lines.  Upon re-visiting I got it to work! :-)

But, only the following form worked:

 *"%INBOX:\"matt@dancingfrog.co.uk\"/clear@imap.1and1.co.uk:993!" "DFInbox"

Not having the pet-name label would cause the folder to silenty dissapear. And it seemed to further damage other pet-name definitions.
