RHEL 5 (and hence Centos 5) was based upon work done in Fedora Core 6.
Since then, lots of work has been done in Fedora to make sure the OS
and applications work better on IPv6. You might want to try running
Fedora 9 to see if IPv6 works better there. Here is a tracker for
IPv6 related bugs:

Specifically, there is a bug in RHEL 5 that I'm not sure has been
fixed yet where the default route doesn't work:

I've been using IPv6 on Fedora for a couple years now, and most stuff
works fine (web browsing, FTP, IRC, SSH). Granted, I haven't tried
some of the more exotic applications like SIP or HIP.
